Tried a waffle hack today, replacing 1/4 cup of waffle mix with ground oatmeal. It made the waffles a little crunchier, with no discernible change in the texture or taste.
1/4 cup ground oats
3/4 cup buttermilk pancake/waffle mix
1/2 cup water
1/6 cup vegetable oil
I ground 1/4 cup of Quaker oats in a coffee grinder for about 30 seconds until a very fine powder emerged. Believe it or not, the coffee grinder works great for this.
I then mixed in the pancake mix, and made the waffles as normal: Mixing in the vegetable oil and water, then stirring with a fork in a mixing bowl for about 2 minutes until smooth.
Let this sit for 4 minutes, while the waffle maker heats up (I use an electric one), then grill for about 3.5 minutes until crunchy outside. Longer sitting time seems to result in fluffier waffles.
Makes about 4 square waffles. Delish!
I’m going to try a 1/2 cup split of oatmeal to mix next time.
